Abstract:  Carnosine (β‐alanyl‐l‐histidine) is found exclusively in animal tissues. Carnosine has the potential to suppress many of the biochemical changes (e.g., protein oxidation, glycation, AGE formation, and cross‐linking) that accompany aging and associated pathologies.
