Wine Microbiology is the first of a text recently revised that was written in Italian by the senior author some ten years ago. The opening statement quotes the first edition: “Much has been written about enology but truly little has been written in enological microbiology”. This statement is certainly true when examining such standard texts as Beuchat’s Food and Beverage Mycology or Technology of Wine Making by Aerine et al. among others.
