Over recent years a huge effort has been dedicated to the elucidation of the mechanisms responsible for the capability of many organisms to survive under environmental stress conditions [1-10]. Homologous disaccharides (C12H22O11), e.g. sucrose, maltose and trehalose,play an important role in nature as bioprotectant systems.
