Vicinal diketones (VDK) cause butter-like off-flavors in beer and are formed by a non-enzymatic oxidative decarboxylation of α-aceto-α-hydroxybutyrate and α-acetolactate, which are intermediates in isoleucine and valine biosynthesis taking place in the mitochondria.
