Sweet potato (Ipomoea batatas (L.) Lam.) has several phytochemicals including anthocyanin that provide many special health-promoting functions as well as other functional components. Sweet potato is thought to be a healthgiving food owing to the numerous diversities of natural products, especially antioxidants.
