Relationship between the inhibition of alcoholic fermentation by Saccharomyces cerevisiae and the activities of hexokinase and alcohol dehydrogenase

Abstract

The cessation of fermentation by Saccharamyces cerevisiae in a medium rich in sugar is not due to an inhibition of the activities of hexokinase and alcohol dehydrogenase. The activity of alcohol dehydrogenase was significantly increased in a medium of low sugar concentration supplemented with toxic substances, ethanol and fatty acids.
