The IX Italian Congress of Food Chemistry (ChimAlSi_2012) contributed 12 lectures, 66 conferences, and 290 posters to the wealth of food knowledge; these were presented in four sessions: food safety, analytical techniques, bioactive compounds, and nutraceuticals. Emerging topics were discussed in two workshops dealing with food contaminants, and food and health. It has been an excellent forum for passionate exchange of recent results obtained in traditional and emerging fields of food chemistry…

Characterization of markers of botanical origin and other compounds extracted from unifloral honeys.
TLDR
A diacylglyceryl ether and 5 other compounds present in different types of honey were identified and characterized for the first time, and belong to several classes, that is, terpenes, organic acids, flavonoids, and others.
Environmentally friendly lycopene purification from tomato peel waste: enzymatic assisted aqueous extraction.
TLDR
This study investigated the possibility of extracting lycopene from tomato waste peels using a green chemistry protocol devoid of organic solvent, which shows a 30-fold increase with respect to the lycopenes concentration of the untreated peels.
Application of one- and two-dimensional NMR spectroscopy for the characterization of Protected Designation of Origin Lambrusco wines of Modena.
TLDR
Application of partial least squares discriminant analysis (PLS-DA) revealed a good varietal discrimination by analyzing the low-frequency spectral region and the signals of 2,3-butanediol, lactic, succinic and malic acids, and threonine were found to be the most statistically significant variables in the model.
Development and validation of a method for the determination of (E)-resveratrol and related phenolic compounds in beverages using molecularly imprinted solid phase extraction.
TLDR
An analytical procedure based on molecularly imprinted solid phase extraction (MISPE) and high-performance liquid chromatography coupled to UV detector was developed and validated for determination of (E)-resveratrol and quercetin in wine and fruit juice samples.
Comprehensive profiling of carotenoids and fat-soluble vitamins in milk from different animal species by LC-DAD-MS/MS hyphenation.
TLDR
Retinol and α-tocopherol were the most abundant fat-soluble micronutrients and the only ones found in donkey's milk along with γ-tocyperol and Ewe's milk also proved to be a good source of vitamin K vitamers.
Quantitative evaluation of auraptene and umbelliferone, chemopreventive coumarins in citrus fruits, by HPLC-UV-FL-MS.
TLDR
This approach is suitable for the identification and simultaneous quantitation of auraptene and umbelliferone in citrus fruits, with the aim of evaluating their nutraceutical potential.
Proteomic approach based on MALDI-TOF MS to detect powdered milk in fresh cow's milk.
TLDR
In this work, matrix-assisted laser desorption ionization time-of-flight mass spectrometry (MALDI-TOF MS) was employed to analyze tryptic digests relevant to samples of raw liquid, commercial liquid, and powdered cow's milk, and diagnostic peptides were detected down to 1% of adulteration level.
Determination of ochratoxin A in wine by means of immunoaffinity and aminopropyl solid-phase column cleanup and fluorometric detection.
TLDR
A good correlation was observed between OTA levels obtained with the two methods, highlighting the reliability of the proposed method, the main advantage of which is the simple OTA determination by a benchtop fluorometer with evident reductions of cost and time of analysis.
NMR spectrometers as "magnetic tongues": prediction of sensory descriptors in canned tomatoes.
TLDR
The NMR metabolomic fingerprints recorded for canned tomato samples were able to correlate to the sensory descriptors bitterness, sweetness, sourness, saltiness, tomato and metal taste, redness, and density, suggesting that NMR might be a very useful tool for the characterization of sensory features of tomatoes.
Proteomic-based analytical approach for the characterization of glutenin subunits in durum wheat.
TLDR
This study represents the first comprehensive analysis of the glutenin proteome and provides a reliable method for classifying wheat varieties according to their glutenin profile.
