The taxonomy of lactobacilli is well established and has been discussed in detail in Volume 2 of Bergey's Manual of Systematic Bacteriology by Kandler and Weiss [1]. The genus Lactobacillus comprises about 50 species that can be arranged in three groups. The obligately homofermentative lactobacilli form the first group.
