A brief review is presented on the electrical properties of cereal grains and their use in sensing moisture content of grain and seed. The basic principles are described for using radio-frequency (RF) (including high frequencies and microwaves) dielectric properties, or permittivity, of grain for sensing moisture through their correlation with moisture content.
