The human body requires more than 22 mineral elements that can be supplied by an appropriate diet (Philip and Martin 2005). However, the diets of the populations subsisting largely on cereals, or inhabiting regions where soil mineral imbalances occur, often lack Fe, Zn, Ca, Mg and Mn.
