U ovom radu su prikazani rezultati senzorne, kemijske i mikrobioloske pretrage domacih kobasica u tipu trajnih ("suhih") kobasica i cesnjovki koje se tradicionalno proizvode u seoskim domacisntvima te rezultati pretraga u ocjeni mikrobioloske cistoce opreme, pribora i radnih povrsina u prostorima gdje se kobasice proizvode. Ujedno, ukazano je na problem sigurnosti proizvodnje tradicionalnih kobasica u odnosu na sirovinsku osnovu, tehnologiju proizvodnje te kakvocu i higijensku ispravnost… CONTINUE READING
