Quality characteristics and oxidative stability of coconut oil during storage

title={Quality characteristics and oxidative stability of coconut oil during storage},
author={Diana Moigradean and Mariana-Atena Poiana and Ioan Gogoaşă},
The main objective of this study is to investigate some quality characteristics based on which we can evaluate oxidative stability of coconut oil during 12 month of storage. The progress of lipid oxidation was assessed by measuring peroxide value (PV), p-anisidine value (AV) and total oxidation value (TOTOX). The low peroxide value (0.24–0.49 meq/kg oil) signifies a high oxidative stability, while p-anisidine values were in the range 0.19-0.87. Fourier transform infrared (FTIR) spectroscopy was…

Physico-chemical Characteristics and Oxidative Stability of Date-Pits Oil during Storage at Different Temperatures
Abstract In this study, oxidative stability of date-pits (i. e. Khalas variety) was investigated during storage as a function of temperature. The stability of date-pits oil was determined by
Oxidative properties of Moringa oleifera kernel oil from different extraction methods during storage.
Findings are significant in highlighting the extraction method resulting in crude MO kernel oil with greatest oxidative stability in the storage conditions tested, and the suitable storage condition of the oil prior to refining can be determined.
The effect of temperature on rice oil bleaching to reduce oxidation and loss in bioactive compounds
Refining conditions are very important to obtain high-quality rice oil. This work aimed at evaluating the effect of bleaching temperature in chemical and physical refining processes to avoid losses
Catole coconut (Syagrus cearensis) oil: physicochemical characterization and thermo-oxidative stability by TG/DTG/DTA and Rancimat
Vegetable oils are subjected to heat treatments during processing and changes during storage. Thus, it is required, for usage as a food source, the evaluation of their thermo-oxidative stability and

Antioxidants Effect of Two Aminomethyl Derivatives of 2-Methoxyphenol on Thermal and Storage Oxidative Stability of Coconut Oil
The antioxidants effect of two aminomethyl derivatives of 2-methoxyphenol: 4,6-di[(morpholin-4-yl)methyl]-2-methoxyphenol (DMMMP) and 5-[(pyrrolidin-1-yl)methyl]vanillic acid (PMVA) on enhancing
An Effect of Oregano on Oxidative Stability of Soybean Oil Via Microwave and Induction Cook Top Heating
The main objective of this study is to evaluate the antioxidant properties of oregano on refined soybean oil as a result of microwave and induction cook top heating. Oxidation changes were determined

Monitoring the oxidative stability of virgin coconut oil during oven test using chemical indexes and FTIR spectroscopy
This study was conducted to evaluate the oxidative stability of virgin coconut oil (VCO) during oven test. VCO with and without antioxidants were subjected to oven test at 63°C over a 40 day-storage.
Chemical Properties of Virgin Coconut Oil
A study on the commercial virgin coconut oil (VCO) available in the Malaysian and Indonesian market was conducted. The paper reported the chemical characteristics and fatty acid composition of VCO.
Membrane processing of used frying oils
Studies were conducted with used frying oils in a flat membrane batch cell using five different types of polymeric membranes to decrease the soluble degradation products. During membrane processing,
Coconut Oil: Chemistry, Production and Its Applications- A Review
Coconut oil is produced by crushing copra, the dried kernel, which contains about 60- 65% of the oil. The oil has the natural sweet taste of coconut and contains 92% of saturated fatty acids(in
The use of FT-IR spectroscopy in the identification of vegetable oils adulteration.
Expensive high quality vegetable oils and animal fats are susceptible to adulteration. Substitution of high quality and expensive oils and fats with cheaper and inferior quality oils or fats and
Quantitative analysis of virgin coconut oil in cream cosmetics preparations using fourier transform infrared (FTIR) spectroscopy.
F Fourier transform infrared (FTIR) spectroscopy with sample handling technique of attenuated total reflectance (ATR) can be successfully used to analyze VCO quantitatively in cream cosmetic preparations and revealed a good relationship between actual value and FTIR-predicted value of VCO.
Reaction of oxygen and unsaturated fatty acids
Oxygen reacts readily with unsaturated fatty acids so that every time these compounds are handled there is a danger they will become contaminated with oxidation products. The products formed first
