Production of galactooligosaccharides from lactose using a beta-glucosidase from Thermus sp. Z-1.

A thermostable beta-glucosidase from Thermus sp. Z-1 that not only hydrolyzes beta-glucosides but also beta-galactosides was shown to efficiently produce oligosaccharides during hydrolysis of lactose.
