Abstract The properties of gellan gum edible membranes under different prepared conditions were studied in this research. Firstly, the results indicated that 0.08% gellan gum treatment can be obtained good tensile strength, moisture resistance and excellent gas-barrier edible films during the drying temperature of 60–70 °C.
