Buckwheat contains rutin, a kind of flavonol, not only in the seeds but also in the cotyledon, leaf, stem and flower. To date, several reports have been published on the physiological roles of rutin. In this review, mainly based on our recent results, we summarize the main aspects of rutin related to its possible physiological roles. The enzymes, which catalyzed a part of rutin synthesis (quercetin glycosyl transferase) and decomposition (rutinosidase), have lower Km especially for quercetin…
