The levels of total polyphenols and o-diphenols were determined in virgin oils and in chloroform/methanol-extracted oils. The solventextracted oils were richer in polyphenols than the virgin oils. High polyphenol content was associated with a high resistance to oxidation of the oils. A linear relationship was found between polyphenol content and the oxidative stability of the virgin oils during storage at 60 C. After removal of the polyphenols, the oxidative stability of the oils decreased…
Determination of phenolic acids in virgin olive oil
Abstract Phenolic compounds, which are present in significant amounts in virgin olive oil, are almost completely destroyed during the refining process of the oils. Numerous phenolic acids were found
Effect of method of extraction on the total polyphenol, 1,2-diphenol content and stability of virgin olive oil
The effect of the method of olive oil extraction on the total polyphenol, 1,2-diphenol content and stability of the oil was studied. The total polyphenol and 12,-diphenol content of oils extracted in
Antioxidant effect of natural phenols on olive oil
The total polar fraction and individual phenols present in virgin olive oil were tested for their antioxidant effect in refined olive oil. Hydroxytyrosol and caffeic acid showed protection factors
Phenolic compounds and stability of virgin olive oil—Part I
Abstract The stability of 24 samples of Greek virgin olive oil was examined in relation to total polyphenol content, and individual phenols were determined by reversed-phase HPLC. Tyrosol, the major
Contribution of polyphenols to the oxidative stability of virgin olive oil
Stability, polyphenol, orthodiphenol, tocopherol, oleic/linoleic ratio, chlorophyll, carotenoid, peroxide and acidity values, K232, K270 and overall sensory score of virgin olive oils from Hojiblanca
Evaluation of antioxidant activities of phenolic compounds from two extra virgin olive oils.
Abstract The aim of this work was to investigate the antioxidant properties of two varieties of olive oil (Chetoui and Chemlali), and to study the protective effect of phenolic extract (PE) from
Separation and concentration of natural antioxidants from the rape of olives
Polyphenols were extracted from the rape of Israeli olive oil using hexane, acetone and ethanol in a simple sequential procedure yielding three fractions (A,B,C). Fraction A (extracted with hexane)
Oxidative Stability of Edible Vegetable Oils Enriched in Polyphenols with Olive Leaf Extract
Commercially available oils (olive oil, sunflower oil, palm oil, and a vegetable shortening) were enriched in polyphenols, by adding olive leaf extract. Addition of the extract was performed in such
Changes in phenolic content and antioxidant activity of Italian extra-virgin olive oils during storage.
The phenolic contents and profiles of the various cultivars showed remarkable differences and the phenolic content was strongly correlated with the antioxidant activity measured according to the beta-carotene test and weakly correlation with the radical scavenging ability.
The effect of refining processes on the total polyphenol and 1,2-diphenol content of olive oil
Summary The effect of commerical olive oil refining processes on the total polyphenol and 1,2-diphenol content of the oil was investigated. the mean losses of total polyphenols and 1,2-diphenols
