Chicory (Cichorium intybus L.) belongs to the family Asteraceae and it is a small aromatic biennial or perennial herb. The whole plant contains a number of medicinally important compounds such as inulin, esculin, volatile compounds (monoterpenes and sesquiterpenes), coumarins, flavonoids and vitamins.
