The aim of this study is to contribute to the qualitative characterisation of six cultivars of Japanese plum (Prunus salicina Lindl.), i.e. ‘Black Amber’, ‘Suplumeleven’, ‘Fortune’, ‘Larry Ann’, ‘Suplumsix’ and ‘Songold’, by investigating their physicochemical and nutritional properties and their volatile fractions.
