Abstract Lactic acid bacteria isolated from boza, a cereal-fermented beverage from Belogratchik, Bulgaria, were screened for the production of bacteriocins. Thirteen of the 52 strains isolated inhibited the growth of Pediococcus spp., Listeria innocua and Lactobacillus plantarum . One of the strains, identified as Pediococcus pentosaceus ST18, produced pediocin ST18 at 3200 arbitrary units (AU) ml −1 in MRS broth at the end of logarithmic growth (i.e. after 24 h). Concentration by ammonium… Expand

Characterization of bacPPK34 a bacteriocin produced by Pediococcus pentosaceus strain K34 isolated from “Alheira”
TLDR
One of 484 isolates in the production of “Alheiras”, a traditionally fermented sausage produced in the north of Portugal, between 2005 and 2007, produced a bacteriocin, designated as bacPPK34, and was identified as a strain of Pediococcus pentosaceus by 16S rRNA sequencing. Expand
Characterization and application of an anti-Listeria bacteriocin produced by Pediococcus pentosaceus 05-10 isolated from Sichuan Pickle, a traditionally fermented vegetable product from China
TLDR
Pediocin 05-10 has potential for application in food preservation, especially in the meat products industry, and could significantly reduce the counts of L. monocytogenes 54002 in pork ham during storage at 4 °C for 10 days. Expand
Pediocin SA-1, an antimicrobial peptide from Pediococcus acidilactici NRRL B5627: production conditions, purification and characterization.
TLDR
Purified pediocin SA-1 is inhibitory to several food-borne pathogens and food spoilage bacteria and appears to be significantly more effective against Listeria spp. Expand
Characterization and determination of the factors affecting anti-listerial bacteriocins from Lactobacillus plantarum and Pediococcus pentosaceus isolated from dairy milk products
Lactobacillus plantarum and Pediococcus pentosaceus strains isolated from dairy milk products, produced bacteriocins that displayed a wide spectrum of antimicrobial activity against Listeria ivanoviiExpand
Partial characterization of bacteriocins produced by three strains of Lactobacillus sakei, isolated from salpicao, a fermented meat product from North-West of Portugal
TLDR
The mode of action of the bacteriocins was bactericidal, as observed against Enterococcus faecium, and they were heat tolerant, and remained active after 2 h at 100 °C, according to tricine/SDS-PAGE. Expand
Partial characterization of bacteriocin AMA-K, produced by Lactobacillus plantarum AMA-K isolated from naturally fermented milk from Zimbabwe
TLDR
Strain AMA-K, isolated from naturally fermented milk produced in Gwanda, Kafusi area, Zimbabwe, was identified as Lactobacillus plantarum based on sugar fermentation reactions and PCR with species-specific primers and inhibited the growth of Listeria innocua and Enterococcus faecalis. Expand

Isolation, purification and partial characterization of plantaricin 423, a bacteriocin produced by Lactobacillus plantarum
TLDR
High DNA homology was obtained between the plasmid DNA of strain 423 and the pediocin PA‐1 operon of Pediococcus acidilactici PAC 1·0, suggesting that plantaricin 423 is plasmids‐encoded and related to the peduocin gene cluster. Expand
Antagonistic effect of pediococcus spp. against listeria monocytogenes
TLDR
