Organic acids are any carboxylic acid including fatty acids and amino acids, of the general structure RCOOH. Mainly short chain mono carboxylic acids such as citric, propionic, fumeric and formic acids etc. are used as potential alternative to antibiotic growth promoter. Organic acids and their salts are able to inhibit microbial growth in the food and consequently to preserve the microbial balance in the gastrointestinal tract.
