Fat based pasty products are an essential part of food industries, both as process intermediate or end products. Such materials are made of a continuous fat phase in which solid particles are dispersed. Phenomena such as yield and fracture occur in those materials and depend heavily on the composition of the samples. The crystallization of fat is altered in presence of particle, which leads to products with different physical properties. However, because of the very complex aspect of the…

Crystallization and rheology of palm oil in the presence of sugar.

The role of nonfat ingredients on confectionery fat crystallization

In this review, ingredient-ingredient interactions and their role in fat crystallization are described along with force spectroscopy as a novel tool to characterize such phenomena.

Rheology and microstructure of pastes with crystal network

This article reviews scientific studies which have been focused on the structure–property relationships of pastes with crystal network by considering fat crystal network as the key example. The…

Rheological behaviour of crystallizing palm oil.

It was shown that oscillatory rheology is a valuable complementary method to DSC and pNMR to evaluate primary crystallization and is capable of differentiating whether crystallization occurs in a two-stage or a single-stage process.

Studies in palm oil crystallization

The melting and crystallization behaviors of palm oil were examined by nuclear magnetic resonance, differential scanning calorimetry, and plasticity measurements and were correlated with composition…

Effect of shear on the rheology and crystallization of palm oil.

How the shear rate as well as extent of shear affects the different steps of the crystallization and aggregation processes in the case of palm oil after the 1st crystallization is shown.

Spherical-tip indentation of viscoelastic material

Indentation Methods in Advanced Materials Research Introduction

Since its commercialization early in the 20th century, indentation testing has played a key role in the development of new materials and understanding their mechanical behavior. Progr3ess in the…
