A novel system to carry and protect epigallocatechin gallate (EGCG), an antioxidant from the green tea, is reported. The system consists of maltodextrin and gum arabic nanoparticles coated with egg-yolk l-alpha-phosphatidylcholine (Egg-PC)/stearylamine (SA) bilayers.
