Sucrose hydrolysis reaction, catalysed by invertase under microwave irradiation was carried out in aqueous, isopropanol + water and polyethylene glycol + water system. The effect of conventional and microwave heating on the rate of hydrolysis was studied under a range of physical exposure conditions.
