[Identification of albumin 0.19 in wheat and other cereal proteins].

Abstract

It was found that albumin 0.19, being an inhibitor of alpha-amylases from human and insect saliva, is not specific for T. aestivum and is also revealed immunochemically by means of antiserum in the proteins of T. durum.
