The present work was aimed to determine influence of temperature in physicochemical characteristics in red wine elaborated from Vitis vinifera var. Gross Collman from Cascas. It was evaluated at different temperatures of elaboration ( 18°, 22°, 27° and 32° C ), this variable was implicated in fermentative process for finding adequate conditions that give optimal physicochemical characteristics; Fermentative process was made using red ripe grape, previously selected and washed; and then…
