The 2,2'-azino-bis-(3-ethylbenzthiazoline-6-sulfonic acid)/H2O2/horseradish peroxidase (ABTS/H2O2/HRP) decoloration method permits the evaluation of the antioxidant activity of complex food samples. This method is capable of determining both hydrophilic (in buffered media) and lipophilic (in organic media) antioxidant properties in the same sample.
