Cheonggukjang (CKJ), a fermented soybean product, has been reported to have beneficial effects on various chronic diseases, including cardiovascular disease, cancer and immune diseases. To investigate whether CKJ induces growth sensitivity in mammals, alterations of key parameters related to their growth were analyzed. Sprague‑Dawley (SD) rats were treated with a high concentration of CKJ (H‑CKJ) or a low concentration of CKJ (L‑CKJ) for 10 days, and compared with vehicle-treated rats. The CKJ…

Toxicity of fermented soybean product (cheonggukjang) manufactured by mixed culture of Bacillus subtilis MC31 and Lactobacillus sakei 383 on liver and kidney of ICR mice

Results suggest that CKJ does not induce any specific toxicity in liver and kidney organs of ICR at dose of 100 mg/kg body weight/day as no observed adverse effect level (NOAEL).

Neuroprotective effects of fermented soybean products (Cheonggukjang) manufactured by mixed culture of Bacillus subtilis MC31 and Lactobacillus sakei 383 on trimethyltin-induced cognitive defects mice

These results demonstrate that CGK fermented by mixed culture of B. subtilis and L. sakei could exert a wide range of beneficial activities for neurodegenerative diseases, including Alzheimer, Parkinson, and Huntington disease.

Quantitative evaluation of the therapeutic effect of fermented soybean products containing a high concentration of GABA on phthalic anhydride-induced atopic dermatitis in IL-4/Luc/CNS-1 Tg mice.

The results indicated that the luciferase signal may successfully reflect the therapeutic effects of CKJ in IL-4/Luc/CNS-1 Tg mice and suggested that CKJ may be considered an effective substance for the treatment of AD.

Improved bioavailability of FSs resulted from the production of active metabolites such as DHD and 6‐hydroxydaidzein after consumption, which can be used as potential therapeutics for the amelioration of osteoporotic bone loss.

Current Perspectives on the Physiological Activities of Fermented Soybean-Derived Cheonggukjang

The physiological activities of CGJ were examined and its potential as a functional food was confirmed, as it can be made without salt, unlike other pastes.

Effects of Nutrifen® and Nutrifen Plus® on reproductive performance and blood profiles of sows

In this investigation under these specific commercial conditions, the use of the two commercial fenugreek products had no clear advantage over the normal commercial diets fed to sows.

Somatopause, weaknesses of the therapeutic approaches and the cautious optimism based on experimental ageing studies with soy isoflavones

Soy isoflavones, phytochemicals that have already demonstrated the health benefits in treated elderly, at least experimentally reveal their potential for the somatopausal symptoms remediation, and Daidzein increased body mass, trabecular bone mass and decreased bone turnover in the animal model of severe andropause, while both is oflavones demonstrated blood cholesterol-lowering effect in the same model.

Relative Assessment of Biochemical Constituents and Antioxidant Potential of Fermented Wheat Grains Using Bacillus subtilis KCTC 13241

High antioxidant levels in food are gradually becoming popular because of enhanced risk of oxidative stress in humans. Bread wheat is rich in vital antioxidants, but a major portion of its bioactive

Yeast hydrolysate induces longitudinal bone growth and growth hormone release in rats

YH administration increased longitudinal bone growth and GH secretion in rats, Consequently, YH may offer an improved ability to treat GH deficiency‐related disorders.

Induction of growth hormone release by glycyrrhizae radix on rat.

HX fraction is the most active fraction of MeOH extract of GR in rGH induction, and both AUC(0-90) of plasma rGH level after HX fraction and that after rGHRH administration were increased significantly from the basal level, respectively.

Ethanol extract of fermented soybean, Chungkookjang, inhibits the apoptosis of mouse spleen, and thymus cells.

It is demonstrated that ethanol extracts of Chungkookjang promote the survival of the mouse spleen and thymus cells in culture by suppressing their apoptotic death.

Beneficial effect of chungkukjang on regulating blood glucose and pancreatic beta-cell functions in C75BL/KsJ-db/db mice.

Results suggest that chungkukjang may be beneficial in improving insulin resistance and hyperglycemia in type 2 diabetic animals that are partly medicated by the regulation of hepatic glucose enzymes and insulin sensitivity in peripheral tissues.

The objective of the study is to compare the amount of new bone produced by Buguzhi (Psoralea corylifolia fruit) extract in collagen matrix to that produced and collagen matrix in vivo. Eighteen bone

The isoflavonoid aglycone‐rich fractions of Chungkookjang, fermented unsalted soybeans, enhance insulin signaling and peroxisome proliferator‐activated receptor‐γ activity in vitro

The data suggest that an increase in isoflavonoid aglycones in CKJ, in comparison to CSB, enhances glucose utilization via activating insulin signaling and stimulates PPAR‐γ activity in adipocytes, and overall, CKJ is superior toCSB in anti‐diabetic action.
