Khedha (Amaranthus dubius Mart.) is one of the most popular leafy vegetable also known as Khedha bhaji and jari bhaji in Chhattisgarh belongs to the family Amranthaceae. It is a rich and inexpensive source of carotenoid, protein, vitamins and dietary fibre (Prakash and Pal, 1991; Shukla et al., 2003). Amaranth uses the C4 cycle photosynthetic pathway.
