Abstract This paper reviews the ultrastructure and chemistry of fish bone, with an emphasis on zooarchaeology and stable isotope analysis. On the basis of the chemical composition of the collagen and the relationships between the collagen and mineral phases, fish bone is more susceptible to biotic and abiotic degradation than mammalian bone and is therefore less likely to be recovered in archaeological deposits.
