The aim of this research was to examine the content of fermentable carbohydrates (glucose, fructose, maltose, maltotriose) in worts produced from different reaction mixtures of cereals. Barley wort and reaction mixtures of the barley wort and other cereals (splitted corn grains, rice and raw barley) are exposed to the extraction procedure (decoction) in acid pH, with addition of the commercial enzyms.
