The main active constituents of common yam rhizome are polysaccharide.The extraction technology of polysaccharide from dioscorea was studied in this paper.The single factor tests and orthogonality tests L9(34) were applied to analyze the influence of the factors,such as solid-liquid ratio,temperature,time and ethanol concentration on the extraction of the polysaccharides.Experimental results indicate that ethanol concentration and temperature will significantly affect the polysaccharides extraction.The optimal solidliquid ratio is 1 g∶15 mL,temperature is 50 ℃,extraction time is 3 h and ethanol concentration is 95%.Under this condition,the yield of water soluble polysaccharides in dioscorea is 2.32%(by fresh yam).
