: In order to predict moisture transfer in a composite food, a mathematical model was developed and tested on a 2-components system constituted of a sponge-cake in contact with a fresh wet filling. Using independent sorption kinetic experiment, a power law was found as representative of the effect of moisture content on water effective diffusivity of sponge-cake.
