For some time the entropy changes accompanying protein association and binding reactions have been regarded as anomalous because they were found to be more positive than “might be expected” for reactions in which the number of free particles is reduced. For example, the entropy change for a standard state of 1 mole per liter is between 0 and -12 entropy units (e.u.) for the dimerization of insulin (1, 2) (depending on the pH and buffer), as high as +30 e.u. for some antigen-antibody reactions… CONTINUE READING
