The effects of a vegetables-fruit mixture (19.5% w/w) were studied on hepatic (h) and colonic (c) 1,2-dimethylhydrazine (DMH)-metabolizing enzyme activities (ethoxy- and pentoxyresorufine-O-deethylation, NDMA-demethylase, glutathione-S-transferase, UDP-glucuronyltransferase) in rats fed low- or high-fat diets (20 or 40 energy%).
