The seeds of four date palm (Phoenix dactylifera L.) cultivars, Hillawi, Khadrawi, Shamran and Medjool were analyzed for their dietary fiber and mineral composition. Total dietary fiber (72.27g/100g) and insoluble dietary fiber (63.44g/100g) were highest in seed of variety Hillawi. All the four varieties of date seed differed non-significantly from each other for their total dietary fiber, soluble dietary fiber and insoluble dietary fiber content. The variety Medjool contained highest amount of…

Effect of Four Pollinating Sources on Nutritional Properties of Medjool Date (Phoenix dactylifera L.) Seeds
The results suggest that selection of the source of pollen has a significant effect on the nutritional properties of the date seed from the cultivar ‘Medjool’, and that its use could be feasible as a functional food or by-product of thedate production.

Nutritional quality evaluation of eighteen date pit varieties
The results show that date pits, depending on the variety, contain significant but quite variable amounts of macronutrient and micronutrients, but all varieties are excellent sources of dietary fiber and may therefore serve as important constituents of functional foods.
Mineral ion content of the seeds of six cultivars of Bahraini date palm (Phoenix dactylifera).
The mineral ion composition of six different cultivars of Bahraini dates palm seeds were analyzed using flame atomic absorption spectroscopy and lead ion content was found to be higher than cadmium ion as metal ion pollutant.
Optimization of phenolics and dietary fibre extraction from date seeds.
Date seed oil: Phenolic, tocopherol and sterol profiles
Oils extracted from the seeds of two date palm (Phoenix dactylifera L.) cultivars, Deglet Nour and Allig, collected from Tunisia, were compared in terms of phenolic, tocopherol and sterol profiles.
Studies on Desi and Kabull Chickpea (Cicer arietinum L.) Cultivars: Levels of Protease Inhibitors, Levels of Polyphenolic Compounds and in vitro Protein Digestibility
The levels of trypsin inhibitors activity were higher in both kabuli and desi seeds of chickpea than their chymotrypsin inhibitor activity and polyphenolic compounds exhibited a highly significant and negative corretation with in vitro digestibility of protein.
Preliminary analysis and potential uses of date pits in foods
Antioxidant activities of date pits in a model meat system.
The aim of the current investigation was to investigate the effect of date pits phenolic compounds compared to BHT as synthetic antioxidant on lipid oxidation and quality of ground beef during
