Abstract This study of 604 Black rural elderly residing in 11 southern states revealed low intakes of calcium, dietary energy and dietary fiber and high intakes of fat and cholesterol. They consumed fewer servings of bread/cereals, fruits/vegetables and milk/cheese, and more servings of meat/poultry/fish than recommended, resulting in inadequate intake of some key nutrients and over-consumption of fats/cholesterol.
