In this work kinetics of dehydration process was investigated according to dehydration temperature changes, samples dimensions and technological treatment of samples. Investigations were conducted on two work temperatures of 50oC and 75oC. Samples were cut to cube shapes with dimensions of 5x5x5 mm and grates with dimensions of 20x5x1 mm. Tests were carried out on fresh and blanched samples. Celery samples dehydration was performed in laboratory infrared dryer (DIR) Mettler LJ16 (Mettler…

The Effect of Pre-Drying Treatment and Drying Conditions on Quality and Energy Consumption of Hot Air-Dried Celeriac Slices: Optimisation
The dried samples compared with fresh samples had increased antioxidant activity but decreased total phenolic compound value, and the rehydration ratio decreased with the increase of sample thickness and blanching.
The effect of microwave drying on moisture content, moisture ratio, drying rate, drying time, and effective moisture diffusivity of celery leaves (Apium graveolens) was investigated. By increasing
Thin-Layer Infrared Drying of Mint Leaves
The effects of drying temperature on the drying time, color and thin-layer drying model were investigated. The moisture ratios changes during the drying time were compared by 38 different
Ultrasound-Assisted Infrared Drying of Pear Slices: Textural Issues
The aim of this research was to investigate the impact of high-intensity ultrasound as pretreatment on the duration of drying and texture characteristics of infrared-dried pear slices using different
Textural properties of infra red dried apple slices as affected by high power ultrasound pre-treatment
Investigating the impact of high power ultrasound pre-treatment on drying rate and textural properties of the infra red dried apple slices showed that hardness of samples gradually increases with increase of ultrasound intensity, and hardness of untreated apple slices was significantly lower.
Effect of infrared radiation on chemical and physical properties on Duku’s peel
Infrared radiation has a potential for drying agricultural commodities such as the peel of duku. Drying of duku's peel in a whole duku using infrared radiation could become an effective method to
The aim of this study was to investigate the effect of microwave output power and sample amount on color change kinetics of celery leaves (Apium graveolens L.) during microwave heating. The color

Changes in antioxidant activity and phenolic content of celery leaves and root during osmotic treatment.
Celery (Apium graveolens) is widely used as a medicinal herb or spice, with prominent antioxidant properties, due to the presence of many bioactive components, mainly phenolic compounds. An
Modelling the drying kinetics of apple (Golab variety): fractional calculus vs semi-empirical models
In this work, two novel models have been proposed based on semi-empirical and factional calculus incorporating non-integer time derivatives in the Fick’s first law of anomalous diffusion. The
