Isothermal crystallization of sucrose glass under ambient condition was investigated by powder X-ray diffraction, isothermal microcalorimetry, and water sorption/desorption analysis. Isothermal microcalorimetry measurements showed that the crystallization behavior was affected by the compression force applied to starting amorphous materials.
