Crop growth and development, and yield formation of Jerusalem artichoke and chicory were studied in field trials harvested periodically. The annual course of light interception, the total dry matter production and, consequently, the light use efficiencies of the two species were similar. Chicory plants remain vegetative in the first year and the pattern of crop growth and inulin storage is simple and efficient.
