The Amaranth is a plant considered as a third millennium crop due to its nutritional properties and its agronomic versatility. Amaranth (Amaranthus hypochondriacus L.) can be cultivated in greenhouses or the open field. Greenhouse cultivation provides better yields but may affect chemical composition.
