AIMS To examine changes in membrane fatty acid profile attributed to the physiological adaptation of Lactobacillus helveticus during vacuum drying. METHODS AND RESULTS The viability and membrane integrity of the cells after vacuum drying were measured by plate counts and DNA fluorescence dyes.
