SUMMARY In an attempt to obtain novel food products based on underutilized and low-cost freshwater species, the food value of the piranha pulp and its yield in the elaboration of canned and sausage products were determined. Piranha specimens were captured in two floodplains of the middle Orinoco River. After considering the state of freshness, the fish were manually beheaded and eviscerated.
