Dielectric properties (i.e. permittivity and loss factor) have been measured for some fresh vegetables and fruits using open ended coaxial probe technique at two different temperatures (16°C and 25°C). Dielectric properties have been measured for the first time for some of the fruits and vegetables cited in this work and other data have been verified.
