Black garlic (Allium sativum) was created from ordinary fresh garlic by processing (aging) it in a temperature (65-80°C)and humidity (70-80%)-controlled room for a month. The heat-extracts of black garlic were rich in S-allyl-L-cysteine (SAC) and enforced anti-tumor activity with a 50% cure rate of BALB/c mouse fibrosarcoma; however, its mechanism still remains unsolved until now. Experiments were carried out to clarify anti-tumor mechanisms using spleen cells culture system obtained from black… Expand

Processed Black Garlic (Allium sativum) Extracts Enhance Anti-Tumor Potency against Mouse Tumors
The black garlic extracts showed anti-bacterial activity against medically important bacteria such as MRSA, enterohemorrhagic Escherichia coli O157:H7, Pseudomonas aeruginosa, and Candida albicans, however its potency was less than that of fresh garlic extracts. Expand
Aged garlic extract prevents a decline of NK cell number and activity in patients with advanced cancer.
It was showed that administering AGE to patients with advanced cancer of the digestive system improved NK cell activity, but caused no improvement in QOL, and both the number of NK cells and theNK cell activity increased significantly in the AGE group. Expand
Aged garlic extract has chemopreventative effects on 1,2-dimethylhydrazine-induced colon tumors in rats.
Findings suggest AGE has a chemopreventive effect on colon carcinogenesis through suppression of cell proliferation, and significantly decreased the mean MIB-5-labeling index. Expand
