A Gas Chromatography Mass Spectrometry (GC-MS) method was developed for the simultaneous determination of 3-chloropropane-1,2-diol fatty acid esters (3-MCPDEs), 2-chloropropane-1,3-diol fatty acid esters (2-MCPDEs), 1,3-dichloro2-propanol fatty acid esters (1,3-DCPEs) and 2,3-dichloro-1-propanol fatty acid esters (2,3-DCPEs) in refined corn oil. The analytes were extracted by solid-phase extraction and were eluted with ethyl acetate. The detection was performed by selected ion monitoring mode… Expand

Fatty acid esters of chloropropanols and related compounds in food: Toxicological aspects
The presence of fatty acid esters of 3-monochloro-1,2-propanediol (3-MCPD esters) has been reported in various types of foods and food ingredients, especially in refined vegetable oils. MoreExpand
Formation of 3-chloropropane-1,2-diol esters in model systems simulating thermal processing of edible oil
Abstract 3-chloropropane-1, 2-diol (3-MCPD) esters are a kind of food processing contaminants that especially occur in edible oil. This study investigated the impact of various factors on theExpand
2-Chloro-1,3-propanediol (2-MCPD) and its fatty acid esters: cytotoxicity, metabolism, and transport by human intestinal Caco-2 cells
It is shown that free 2-MCPD but not 2- MCPD fatty acid esters were able to cross a monolayer of differentiated Caco-2 cells as an in vitro model for the human intestinal barrier and were hydrolyzed by the cells, thereby releasing free 2 -MCPD which was neither absorbed nor metabolized by the Cells. Expand
Analysis of 3-MCPD and 1,3-DCP in Various Foodstuffs Using GC-MS
To analyze 3-MCPD and 1,3-DCP in various foods using gas chromatography -mass spectrometry, the analytical method was validated in terms of linearity, limit of detection (LOD), limit of quantitation, accuracy and precision. Expand
Relative oral bioavailability of 3-MCPD from 3-MCPD fatty acid esters in rats
Assessment of the extent of exposure to 3-MCPD released from its fatty acid esters should be performed in the same way as exposure to the same molar quantity of 3- MCPD. Expand
Occurrence of 3-chloro-propane-1,2-diol (3-MCPD) and related compounds in foods: a review
A critical review of the occurrence of 3-chloro-propane-1,2-diol in foods not known to contain hydrolysed vegetable proteins is presented, with particular reference to cereal, meat and dairy products. Expand
Toxicology, occurrence and risk characterisation of the chloropropanols in food: 2-monochloro-1,3-propanediol, 1,3-dichloro-2-propanol and 2,3-dichloro-1-propanol.

1,3-dichloro-2-propanol has the most toxicological relevance showing clear carcinogenic effects in rats possibly via a genotoxic mechanism, and its exposure is of low concern for human health. Expand
Mechanism of formation of 3-chloropropan-1,2-diol (3-MCPD) esters under conditions of the vegetable oil refining.
It has been proved that the higher fatty acids content in the oil caused higher 3-MCPD esterscontent in the deodorization step, and potassium salts are more effective than sodium salts. Expand
Fatty acid esters of 3-MCPD: Overview of occurrence and exposure estimates
Many studies and surveys concerning the ocurrence and exposure of free 3-MCPD have been performed in the last 30 years. Although a huge number of food samples, especially fats and oils, were analysedExpand
Effects of Degumming and Bleaching on 3-MCPD Esters Formation During Physical Refining
Crude palm oil (CPO) was physically refined in a 200-kg batch pilot refining plant. A study of the possible role of degumming and bleaching steps in the refining process for a possible critical roleExpand
