The caffeine biosynthetic pathway in coffee plants has been proposed to involve three distinct N-methyltransferases, xanthosine methyltransferase (XMT), 7-N-methylxanthine methyltransferase (MXMT; theobromine synthase), and 3,7-dimethylxanthine methyltransferase (DXMT; caffeine synthase).
