Egg whites can be readily hydrolyzed to produce small fragments which may be a good source of bioactive peptides. The aim of this study was to investigate anti-aging bioactivities of peptides produced by alkaline hydrolysis. The results demonstrated that neutralized egg white hydrolysates (EWH) at 5 mg/mL showed high antioxidant activity on free radicalscavenging activity at 67.1±1.7% and inhibited lipid peroxidation at 81.1±2.9%. Moreover, it possessed high reducing power equivalent to 0.2502… Expand

Antioxidant activity of peptides derived from egg white proteins by enzymatic hydrolysis.
TLDR
Results support that antioxidant peptides and amino acids not only act individually, but also cooperatively and synergistically, for the control of cardiovascular diseases, particularly hypertension. Expand
Antioxidant Effect and Functional Properties of Hydrolysates Derived from Egg-White Protein
TLDR
The Neutrase hydrolysate showed the highest 2,2-azino-bis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging activity and was identified as the optimal enzyme for hydrolyzing egg-white protein to yield antioxidant peptides. Expand
A novel antioxidant and antimicrobial peptide from hen egg white lysozyme hydrolysates
Abstract Hen egg white lysozyme (HEWL) was hydrolyzed with papain, trypsin and a combination of the two to isolate antioxidant peptides. The prepared hydrolysates were evaluated for antioxidantExpand
Antioxidative activity of hen egg ovalbumin hydrolysates.
TLDR
The results showed that the hydrolysates of ovalbumin had a distinctly inhibitory action to superoxide anion made by alkaline pyrogallic acid, HO and all three concentrations could significantly decrease the MDA contents in the serum and liver of aged mice induced by G-gal. Expand
ANTIOXIDANT, ACE INHIBITORY ACTIVITIES AND FUNCTIONAL PROPERTIES OF EGG WHITE PROTEIN HYDROLYSATE
ABSTRACT The antioxidant, angiotensin-I-converting enzyme (ACE) inhibitory activities and functional properties of egg white protein hydrolysate (EWPH) prepared by papain under differentExpand
Influence of degree of hydrolysis on functional properties, antioxidant and ACE inhibitory activities of egg white protein hydrolysate
Functional properties, antioxidant, and angiotensin-I converting enzyme (ACE) inhibitory activities of egg white protein hydrolysate (EWPH) prepared with trypsin at different degree of hydrolysisExpand
Effect of Peptide Size on Antioxidant Properties of African Yam Bean Seed (Sphenostylis stenocarpa) Protein Hydrolysate Fractions
TLDR
The results show potential use of APH and its membrane fractions as antioxidants in the management of oxidative stress-related metabolic disorders and in the prevention of lipid oxidation in food products. Expand
Antioxidant and anti-inflammatory properties of cancer preventive peptide lunasin in RAW 264.7 macrophages.
TLDR
It is demonstrated that lunasin reduces, in a significant dose-dependent manner, the production of reactive oxygen species by LPS-induced macrophages, and is proposed as a cancer preventive and therapeutic agent but also as an agent against other inflammatory-related disorders. Expand
Egg white proteins and their potential use in food processing or as nutraceutical and pharmaceutical agents--a review.
TLDR
Hydlyzed peptides from these proteins showed very good angiotensin I converting enzyme inhibitory, anticancer, metal binding, and antioxidant activities, indicating emerging areas with many new applications of separation of egg white proteins and the productions of bioactive peptide from eggwhite proteins. An antioxidant peptide derived from Ostrich (Struthio camelus) egg white protein hydrolysates
Abstract Ostrich (Struthio camelus) egg white (OEW) proteins were hydrolyzed using various proteases (α-chymotrypsin, pepsin, trypsin and papain). Antioxidant activities of hydrolysates wereExpand
