Abstract Partially amidated pectin derivatives (N-alkyl pectinamides) were prepared from highly methoxylated citrus pectin by treatment with different primary amines in methanol. The characterisation of reaction products was made by elemental analysis, photometry and diffuse reflectance FTIR spectroscopy.
