When seeds of soybean were subjected to accelerated aging, the amount of total lipid which was extracted from the whole seed increased with "age," whereas the extractable phospholipid decreased slightly. This small decline primarily reflected changes in the amounts of phosphatidylcholine and phosphatidylethanolamine.
