Two Chinese jujube (Zizyphus jujuba) cultivars ('Huanghua' and 'Zhanhua') at unripe and ripe stages were investigated. During ripening, the weight, pH, hardness, and chewiness of both cultivars decreased while titratable acidity, total soluble solid content, and pectin contents increased.
